Wild King (Chinook) Salmon

The “king” salmon is the largest of the salmon species. It is known for its buttery flavor and fatty profile.

Wild Coho (Silver) Salmon

Coho are very similar to king salmon but smaller. Wild Coho meat appears soft but firms up when cooking. It is moderately fatty, flakes well and has an excellent, mild salmon taste.

Ahi Tuna (Yellowfin and Bigeye)

The deep, bright red flesh is firm, meaty and moist with large flakes when cooked. Commonly, Ahi Tuna is served raw as sashimi or seared.

Tombo Tuna (Albacore)

Albacore has the lightest colored meat of all the tunas and has a mild, rich taste and a firm, steaky texture with large, moist flakes.

Swordfish (Shutome)

This wonderful fish is a favorite grilling fish due to is tender, firm texture and very mild taste. The flesh is pale to pinkish in color.

Mahi Mahi (Dolphinfish)

Not to be confused with the Dolphin that is a mammal, Mahi Mahi is an open ocean fish that has a sweet, mildly pronounced flavor that is fairly firm in texture and has large, moist flakes.

Atlantic Salmon

Atlantic Salmon’s flavor is milder than that of the wild salmon species. The meat is moderately firm, orange in color and has a large, moist, flaky meat.

Catfish

Because it is a grain-fed, farmed fish, catfish has a consistently sweet, mild taste, with moist, dense meat and less flake than typical whitefish.

Trout

Farmed Utah and Idaho rainbow trout is a great menu product. With modern processing technology, guaranteed boneless trout is now a mainstream product.

Shrimp

We directly source premium wild shrimp from the Sea of Cortez in Mexico. This shrimp is harvested in small batches by artisan fisherman and promptly processed. Fog River also specializes in shrimp from Central America and Asia. Shrimp is available in IQF and block forms, both with the shell on, or in various value-added and peeled forms.

From sushi bars to fusion restaurants, our broad variety of specialty sushi products enhances many menus. Over 200 items of fresh, frozen and dry goods include konbu, white soy sauce and yuzu juice, frozen unagi, 5 different tobikko, live uni, sea robin and fluke. Sushi basics such as tuna, albacore, and hamachi are always available.
