Tomato Basil Monkfish


2 Tablespoon Oil
1/2 Yellow Onion
1 teaspoon Crushed Garlic
1 teaspoon Salt
1 teaspoon Black Pepper
1 teaspoon Lemon Peel
1 28oz can Crushed Tomatoes
1 1/2 teaspoon Chili Garlic (or Sambul)
2 tablespoon Fresh Basil
1 large Monkfish tail

Time: 30 Minutes
Step 1

Salt and pepper Monkfish tail.

Step 2

Heat 1 Tablespoon of oil in a large sauté pan on medium high.

Step 3

Cover Monkfish in sauté pan and cook approximately 5 minutes on both sides.

Step 4

In a separate pan sauté onion and spices with 1 Tablespoon of oil until onions are tender. Add crushed tomatoes and simmer for 5 minutes. Add fresh basil.

Step 5

Slice Monkfish into quarter inch medallions and top with sauce. Garnish with more fresh basil.
