A delicious yet simple way to cook Sockeye.
2 Cups Panko (Japanese bread crumbs)
1/4 Cup Parmesan Cheese
1/4 Cup Shredded Cheddar Cheese
1 Teaspoon Old Bay Seasoning
1/4 Teaspoon Black Pepper
1/4 Teaspoon Onion Powder
1/2 Teaspoon Garlic Powder
1/2 Teaspoon Salt
1/3 Cup Butter, softened
One side Sockeye Salmon (2-3 lbs)
Preheat grill to medium-high heat.
Mix all ingredients together in a medium bowl until the butter is blended into the panko.
Spray non-stick cooking spray on a large piece of heavy duty foil (or stack together 2 pieces of regular foil). Place salmon on foil skin side down. Crumble breading over top of salmon and fold foil over to create a foil tent.
Place on grill and close cover to bake for 15-20 minutes.
