Curry Sablefish

Ingredients:

1 Tsp oil
1/2 cup yellow onion- chopped
1/2 cup shredded carrots
1/2 tsp salt
1/2 tsp black pepper
3/4 cup coconut milk
1 1/2 tsp curry paste
1 1/2 tsp sugar

1 1/2 pounds Sablefish (Black Cod)- cut into 4- 6oz portions

Time: 30 minutes
Step 1

In a pan heat oil to medium high. Place Sablefish into pan and cook for 4-5 minutes on each side.

Step 2

In a separate pan heat oil to medium high. Place carrots and onions in pan and cook until soft.

Step 3

Stir in coconut milk, curry paste, and sugar. Add salt and pepper.

Step 4

Place Sablefish on plate and spoon the sauce over. Enjoy!
